Savory Tofu Scramble with Greens

I love recipes that can be used in many ways, and this is one of them. This quick, nourishing tofu scramble works beautifully for breakfast with toast or wrapped up for lunch or dinner with extra toppings and seasonal greens.

Ingredients
- 1 tablespoon olive oil or ghee
- 1 block firm or extra-firm tofu, drained
2 cups chopped greens (kale, spinach, or Swiss chard)
- 1–2 tablespoons Khalo (to taste)
½ tsp Salt, or to taste

- ¼ cup sliced onion
- 1–2 cloves garlic, sliced
- Pinch of chili flakes

- Toast, flatbread, or wrapped in a tortilla
- Optional cheese: feta, cheddar, or goat cheese
Directions
- Warm the pan. Heat oil in a large skillet over medium heat.
- Build flavor (optional). If using aromatics, add onion, garlic, and chili flakes. Sauté for 2–3 minutes until softened and fragrant.
- Add the tofu. Break the tofu into the pan using your hands (more fun and better texture than chopping). Cook for 3–4 minutes, letting it warm through and lightly brown.
Add the greens. Stir in greens and cook until just wilted — spinach will take about 1 minute, kale or chard about 2–3 minutes. You just want to wilt them not over cook
- Add Khalo. Stir in Khalo and cook for 1–2 minutes so the flavors meld.
- Season. Add salt to taste. Adjust Khalo if needed.
- Serve. Enjoy on its own, as a side, with toast, or in a wrap.
